Would it be possible to buy a second camera and wire up its ADCs to the sensors on the first camera and then read the next set of vertical pixels? Effectively doubling the vertical resolution?

I wouldn't say it's completely artificial. Steam offers APIs for things like cloud saving, workshop, achievements, cards, etc. and any games that want to make use of those things pays dev costs to integrate it EXCLUSIVELY for the

I believe it because Windows comes on all kinds of devices and supports all kinds of hardware mixes and SKUs. It effectively encompasses the entire price range in a way that Apple doesn't care to.
