A little easier? Seems to me it would make theft a lot easier; it removes the requirement that everything you're buying has to come out of the bag and in front of a cashier. Self-checkout still requires things to come out of your bag

"Low margin" is relative. If the owner is taking home more money than the employees, there's room to shift things. I would bet quite a lot that most Burger Kings are in that position.
