The models themselves, like GPT from ChatGPT, Opus from Anthropic, etc. are just the "brands" of LLMs. But there are local models, that run on your own hardware as well like Qwen from Alibaba and Kimi K from Moonshot. Kind of like

Start? We're well past that. If your SaaS is just a fancy wrapper on some CRUD it's already been cloned by AI a dozen times. Even if it has some level of sophistication, unless there is a trove of data that only you have access to
