China installed mora solar than the US has in 2025. They're currently building 35 or so new reactors, at paces nobody else can. This will change quickly.

Yeah those exist, meant regular induction cooktop. Still ok for most wok dishes if you cook on batches. Regular gas stoves aren't really powerful enough for proper woking anyway, so an induction wok shaped one might actually be better

Yeah that's the way, creates magnetite. Many manufacturers recommend the normal cast iron way that creates a brown seasoning that is stripped if it sees a lemon and doesn't get better over time.

Salt won't penetrate much in even an hour unless it's very thin, overnight dry brining is better though.

Hard to get a seasoning that isn't stripped by acids, most vendors don't seem to provide the correct method either, leaving people with a blotchy seasoning.

I have one of each more or less. Stainless are great as they can stick and you can use the sucs for pan sauces, but can also be essentially non stick if handled correctly.

Best pho I had was in Tokyo, thinly sliced raw wagyu melted into the soup. Though theres as many ramen styles as there are cities in Japan, some style would likely suit you.
