It seems to me companies should instead invest in open source alternatives. They could pay less, funding the development of open source alternatives and everyone wins. Blender is a good example of this.

I suspect that US laws have made unions mostly toothless. I know this has happened to teachers unions. It's illegal for teachers unions in TN to strike(I don't know about other states). What power does a union have if they can

Sadly I don't see Nashville creating a municipal ISP. Google fiber has been such a disappointment here. It's only available to a very small area.
