I'm not sure about materials for teaching FP in the abstract, but Racket appears to have a very good ecosystem for beginners; see the "Learning" section at http://racket-lang.org/ http://racket-lang.org/ Also, http://www.bootstrapworld.org/ http://www.bootstrapworld.org/ is an interesting project.
