I don't think all companies interview like that. In my honest opinion, the interviewing game is changing if you don't interview at any of the giants. You can also ask about what the on-site interviews are like before you commit to them. If they mention white-board programming, just pass on them. I am super against horrible interview practices (I'm all for phone screens being you and the interviewer SSH'd and in the same screen session together), but you can find companies that have good ones, and part of that task lies on your shoulders.
