Because companies realized they could purify and sell non-edible salt. Then people got sick so they readded iodine. Traditional salt was not purified or bleached much and left in trace elements.

  Non-edible salt is purified and companies readd some trace elements. Iodine deficiency is the most obvious disease.

    But do you have any source backing your claim that purified salt was the cause of people getting sick?

      A lack of trace elements causes people to get sick. Does purified salt provide those trace elements? It did not, therefore iodine was added.
