I remember asking my stats professor in undergrad about the "whys" of the various hypothesis testing schemes we use, and he eventually just told me that I should take a math-stats class in graduate school. I did that (and it was pretty enjoyable), but it certainly raised just as many questions as it answered, when it comes to the null testing --> hypothesis rejection ritual that scientific disciplines have converged on!
