Did we even read the same article? It's a well written story about eating at a traditional sushi shop in modern times, not a specific guide about how you are supposed to eat sushi or a commentary on modern sushi variations.
- beaner 12y agoPeople keep saying this, but I haven't heard a Japanese chef voice opinions that don't agree with these "commandments." It does kind of come off as not "eat this way because I am idiosyncratic chef," but "eat this way because it is the right way."
