I disagree that appealing to high end watch enthusiasts is Apple's goal with these videos. Apple creates these type of videos for almost every product they sell. Take a look at the new macbook video and you will see the same kind of theatrics. They just really enjoy showing this stuff off. They have some of the best manufacturing in the industry and they are proud of it.
