Never done any homework but I'd say keep it focused and usable. Rather than "homework" make it a project that is expected to use the knowledge garnered since the previous project. Then use the "best" project as a recap during lesson. Most of my lesson time were spent sleeping as I live in the "slowest student sets the pace" country of Sweden.
