I was doing good until he tore his fingernail off. Yuck! Is that something that really happens?

  I think what they were going for is the water can be so cold you loose the sensation in your fingers so trying to get a response combined with decreased body temperature, results in applying too much force to break it off. Also makes for a good cringe factor to make the simulation feel even more real.
