I followed the instructions in this post several years ago, and I can confirm that it produces an excellent finish. One of our pans has taken a bit of abuse recently, however, and has started to rust. I can't say I'm excited about having to do this again... Still, you can't beat cast iron for durability and ease of cleaning.
