Why not do both? You can do contract IT work for 15-20 hours a week and then try to fill the gaps with freelance plumbing. It will take a while to set-up: liability insurance, increasing your skill set, ect. But, I have always believed in doing multiple, sometimes unrelated projects just so your mind doesn't go crazy. Who knows, some day you might build a "smart toilet" and make a shit ton of money.
