oh but it has. in spain and italy, for example, they test kids in school for gluten because so much of their regular diet contains gluten. this mandatory testing has been going on for many years. even the mcdonalds in those countries have gluten free options. we are not at that point yet, here in the us. what we have going on that europe doesn't are the growing number of people doing it voluntarily/for fun.
