I think you mean a debunking of Taubes's insulin theory, which I've been convinced for a few years now is rubbish. However, the posted article doesn't mention the words insulin or "carb" at all and it's a pretty interesting article about epidemiology. Taubes's GCBC ended with some ridiculous speculations about carbohydrates, but there was some solid stuff in there about the history of nutritional science and how we ended up demonizing dietary fat.
