This hasn't been mentioned it seems but I just used a turnkey vm (from http://www.turnkeylinux.org/ http://www.turnkeylinux.org/) to setup Gitlab. Looks like the vm is not the latest version but it was a painless install.

This is the way I'd prefer to use gitlab. KVM/Vmware/openvz instances are the way to go. I think they also have an amazon instance.
