iOS Backup: Create an Archive

If you want to keep a specific version of a backup for your iPhone/iPad - first backup the device in iTunes - open Preferences, Devices - right click on the device and select "Archive" - your backup will now show a date and won't be overwritten by the next backup Not sure why this is so hidden but it's quite handy to keep specific versions for testing&debugging.
