For the same reason we don't write Assembly code or C or binary most of the time. Just because you can do it doesn't mean it's the most effective use of your time. The problem with HTML is the closing brackets that don't need to be there if you use indentation. If you are using indentation anyway, what is the point if closing tags? You can eliminate a lot of extra characters. It's not always perfect, but in many cases it is a lot cleaner.
