I had a discussion with somebody who knows about XP Embedded, which is apparently a lot scarier than regular XP. For one thing it's used in a lot of applications where credit card readers are attached, and for another thing the system requirements went from 128MB to 1GB between XP and 8 which makes upgrading really unattractive. The path of least resistance for the people I talked to seems to be moving to embedded Linux or a Android and rewriting all the software. But they weren't terribly happy about it.
