My family has been part of the seafood business in North America for almost 30 years, and I definitely have the ability to distinguish between fish species just by looking at flesh. This article makes no attempt to distinguish between what sushi bars label as 'tuna' and 'white tuna'. Order 'tuna' and you're almost always going to get tuna. Order 'white tuna' and you're almost always going to get escolar/albacore.
