Why do I want to watch my candidate write code? Doesn't that just make them incredibly tense? Isn't that queering my results?

  Without getting too much into the theory of it - it's generally better to give the candidate a chance to fail early on.

    No. We actually work to factor out a lot of the hard technical stuff into stuff candidates do at home.
