The selection of both pasteurized and raw-milk (local and imported) cheeses at the little local co-op here in northern New England is astounding; far more options than I’ve seen in all but the best cheese shops abroad—-I can get all of my favorite foreign cheeses here, whereas I’ve never found my favorite american cheeses while traveling.
