When I was an Asian student (I'm still Asian), my strategy was to apply to good-but-not-elite schools, and spent my time trying to load up diversity scholarships and merit-based scholarships. I got a full-ride to a great non-elite school; there are plenty of schools like the one I went to that would love to have more non-white students, and are even giving away money for it. I'd much rather go to a good school for free than to go to an elite one and be in debt.
