There aren't really any mail.app-like clients, with a heavily simplified interface. Most clients I can think of have very traditional interfaces, or are aimed at big mail users and lean on the heavily configurable side (like, say, mutt). I'm not sure if there is a demand for this sort of simplified things for Linux, tough, but I guess I'm not the target audience.
