How do they decrypt HTTPS? That shouldn't be possible? Are they exchanging certificates in the middle?

  They sold the phone, and so they controlled the browser installed on the phone. HTTPS is only secure if you can trust both ends: the receiving end and your browser. In this case, the browser was unreliable.
