What confuses me with these triangles is: shouldn't the color space be 3-dimensional? One dimension for each cone? And then the real-world percievable colors are a 1d-manifold in there?

color is two-dimensional it's easy to see: RGB somehow contains brightness information but that's not part of color, so one dimension less

  Ok, sure, but those LMS triangles are just for hue.. So you are saying that 3d space has a 3d suspace of visible light?
