A paperback copy of Lauren Ipsum [1]. It's sort of like Alice in Wonderland for the 21st century. On the surface it's a fantasy adventure, but the dialog and situations teach the reader about the joys of abstract thinking. Seven years old might be a little young to read it on his own, but it would be a great bedtime story if an adult's willing to read to him on a regular basis. I can easily imagine this being a story you could come back to again and again, getting a little more out of it each time as the reader gets older and wiser.
