Check out my project http://pypi.python.org/pypi/django-mongonaut http://pypi.python.org/pypi/django-mongonaut / https://github.com/pydanny/django-mongonaut https://github.com/pydanny/django-mongonaut which which when tied with MongoEngine provides you with a stable interface for building django.contrib.admin-like UIs just as easily. Also, why not just use Postgres with Hstore? All the benefits of MongoDB, but with the bonus of being in a mature, stable database. And integration with Django is trivial.
