Here's an off the wall idea that i'm not sure is even technically feasible, but: How about a way to "OCR" the drawn interface in a way that the software is able to parse the elements out (buttons, toolbars, swatches, etc.) maybe using the iOS HIG and other contextual clues. The output would be a xib file, ready to iterate on.
