Already tried twenty years ago, although with LCD not eInk: https://en.wikipedia.org/wiki/Optimus_Maximus_keyboard https://en.wikipedia.org/wiki/Optimus_Maximus_keyboard. The keyboard was too expensive to be mass-produced at the time, though.
