It is too easy, which is why I don't find it funny. But often, people don't seem to mind telling "easy" jokes... perhaps because they don't have the requisite wit to invent difficult ones. Minorities have their own jokes. They don't need you to invent ones for them. If you're close enough to members of the minority, they'll tell you the jokes. If you're not in on the existing jokes, it implies that you're not in a position to be making up ones for them.
