for me, it would be bread and cheese making (easier cheese varieties), vegetable fermentation, more cooking of various cuisines including indian ones, drawing and painting, carpentry, permaculture (i did organic gardening earlier, which is a subset), wood carving (done some before), and maybe tailoring (making clothes, by hand or by sewing machine, for own use). only a few at a time, of course, maybe only two, and by rotation. and then maybe i would narrow it down to two or three for long term. would try to make money from a few of them too.
