Completely doable; even in a smaller vehicle. I spent the second half of grad school living in a Hyundai Elantra - take out the back seats, sleeping between the trunk and the back seat. Not the most comfortable living, but completely doable. Mostly, the flexibility and minimalism appealed to me, the $ savings were a secondary benefit (and weren't that beneficial, as food costs go up without a refrigerator).
