I don't know about going vegetarian but they are probably the best tasting leaf vegetable. I prefer them raw. The stalks also produce fiber that is long and strong - almost as good as flax/linen. The plant is very easy to grow because it spreads both by rhizomes and by seed although that means you have to be on top of it in order to control its spread.
