Many people who live off grid do not have a well or anything, they carry water in. This means they do things to minimise the amount of drinking water (called "potable water") they need. This is just normal off grid life, nothing remarkable. On the other hand, normal housing where potable water is used to flush toilets etc uses a large amount of precious water!
