What would be a good place to start if I want to learn more about it? I haven't yet read your PA proving Goodstein sequences article, though I have skimmed it and it is, indeed, super interesting. And for the record, Godel, Escher, Bach was probably the single most important influence on me even starting to get interested in computation, etc.
