1. I only use (a modified version of) packfile/ packfile idx from Git. No commits are actually created. It sounds like you're looking for something like flashbake (http://bitbucketlabs.net/flashbake/ http://bitbucketlabs.net/flashbake/).
2. phoenixfs doesn't create commits, so no git-push.
3. I currently don't have access to an OS X box, sorry :(
