In my experience it's more that even very small technical hurdles with something like Mastodon or Plex are too much for some users. To expand on that - independent software or services usually require users to exercise a little more know-how and agency than Facebook or Twitter which "just work". That prevents user adoption, and said patteren of lack of adoption has a chilling effect on potential software development within that space.
