As with everything else to do with religion, it probably comes down to something to do with exerting power and control over other people, typically for the profit of the people writing down the "laws" in any given religious text.
Chance are the dude who wrote the rules against eating pork was a beef farmer (Or more likely some kind of noble type who owned beef farms, but didn't do any actual labour themselves) and so the whole thing was just a way to force people to do the thing that made some particular dude or group of dudes the most money and that gave them the most power over other peoples lives.
