I still see it used commonly for VMs.

  Yeah, what's up with that? Like, I don't mind qemu defaulting to BIOS, but why is UEFI booting a VM so convoluted?

    Just use Hyper-V. It does UEFI, TPM, GPU passthrough and partitioning and everything else you need by default /ms
