I don't believe Pollan actually mentioned "seed oil" as a concept though. He criticized factory farming and also corn, but I don't think he went beyond specific ingredients or the macro level of industrial vegetable oils. And if anything, he helped solidify the desire for vegan-friendly oils in cooking.
