I would never show an interviewer how I code. Let alone allow them to give me 2 hours to solve a problem. It's contradicting that you know that developers "mostly shine when not under pressure", yet you set 2 hours to solve a problem (Sounds like you don't want to pay them for the take home). The positive feedback you're getting for your flawed process just shows how worse other, more common, recruiters are.
