I do something similar except I tend to have 2 primary projects per thing (games/writing). I do only focus on one of those primary projects per category, but I have another one to switch to for when I get burnt out on the other. And when I get burnt out on the second I'm usually ready to switch to the first one again.
If I get a new idea I'll scratch the itch for a little while and then usually file it away. Sometimes the new idea ends up becoming one of the new primary projects, and one of the other primary projects gets put on the backburner.
