Not sure where do you live but in most parts of the world now ISPs do use SFP connection to their CPE but it's up to them to provide SFP on their CPE to their customers device gateway.
Ubiquiti EdgeRouter X SFP is several years now but it has SFP built-in port [1],[2].

I haven't been keeping up with modern user-owned equipment, the NBN ONT doesn't present SFP but I have what may be the first generation which probably will never (need to) be replaced. Maybe newer builds do get SFP presentation choice? We all got 2x RJ11 2x RJ45, the RJ11 are now SOL because nobody is doing phone presentation, you get VOIP for landline over the RJ45 if you get anything (I wound up on a cisco ATA mini thing to get me back to my landline handset before I ditched VOIP. 2x RJ45 means you can try-before-you-buy a second overlay ISP on the fabric, or run two if you want some kind of higher layer diversity. Its GPON done badly and we will never get symmetric services, which an SFP presentation would be very nice for, and things max out under 1GBPS.
