It originally used grated cheese according to this article from the Canadian magazine The Walrus (Canada has/had a love affair with Kraft Mac & Cheese or Kraft Dinner as they call it there -- think of the BNL song "If I had a million dollars".)

- whoomp12342 2y agothat makes sense but this very article states: "The powder is a cheese sauce that has been partially defatted and dehydrated" in the section that they discuss happening in 1937. Such an obvious contradicting makes me question the validity of this article
