- PaulHoule 2y agoChronology is right for HFCS but I find the biology hard to believe. HFCS is a combination of glucose and fructose very similar to what is in sucrose except it is sweeter on the tongue and rotates light the other way. I'd expect it to behave very similarly in the body. There's the case, however, that it is cheaper or that in the 1980s junk food started replacing fat with sugar (e.g. the "Snackwells phenomenon".) On the other hand, if you believe there is a setpoint then people ought to stablize their consumption unless something (glyphosate, BPA, PFAS?) affects that setpoint.
