I tried to keep a simple table in Apple Notes and it got frustrating, fast. Couldn't control formatting and it would randomly change font sizes. Looked at alternatives and was confronted with more complexity - looks like notes are just the entry point to mindmaps/braindumps/network diagrams of thought processes. Creating a table in Markdown is even less fun that creating it in Notes. Now I just track my blood pressure on paper.
