How do restaurants get a Michelin star
- ggm 2y agoOn the whole, I think the burden of one would be enough. You have 2 to aim for. The burden of 2 would be that 3 might be unattainable. 3 would be a nightmare of failed expectations. I have read of 3 star chef giving one back rather than experience having it taken, but if the word was out that might be cover for reality of having it taken "in advance". I don't actually enjoy Michelin starred places. It's too stressful to balance the price:value equation behind the experience (if I had fuck-you money I might feel different) -Just off Michelin are people who seem to enjoy what they are doing and I value that immensely. I've eaten in some, and they were very good at doing the whole package. It is probably just me and the mismatch of expectations and reality. Going to Les Routiers as a child was a culinary experience I enjoyed. Ta-DAA food placement and foam generally doesn't get to the same level of childish WOW being exposed to new food tastes. A Backyard Meshoui with a whole roast goat, thats something every child should experience. Or even just really good dark chocolate in white bread, up a hill in the rain. Michelin say cheap street food done well is worthy of note. I can agree with that, and afford it. The problem is the logical place out is Din Tai Fung: A mega chain which is crap in many places, and formulaic even when it works well (I have eaten at many, the original in Taipei, the newer Taipei 101, in Taichung, Hong Kong, Singapore, Melbourne)
